I'm nor sure what the powder coating equivalent would be but several guys, including me, have used Rustoleum's Hammered Metal Black which has a super nice appearance.
Out of your list I'd suggest something along the lines of a semi-gloss black.
I think gray is just too far off from correct; flat black, I feel about the same; and gloss black is too much shiny.

Valspar lo-glare black from tractor supply
1st I sandblast, then POR15 as a primer, while POR is still tacky I topcoat with the Valspar from TSC. About as close as you can find to "chassis black" and tough as nails
